Tasting Notes
CALLABRIGA RESERVA DÃO 2004 is deep red in colour with complex and lively red fruit aromas, with components of fresh fruits and fruit compotes, as well as nuances of aromatic herbs and sweet spices. CALLABRIGA RESERVA DÃO also has some notes of resin, cedar and tobacco. Complex and elegant, this wine has good, balanced acidity with consistent tannins. Its finish is long and complex.
Serving Suggestions
CALLABRIGA RESERVA DÃO 2004 is ideal with poultry, meat, and intense and very aromatic cheeses. Serve at 16º-18º C. Try it as an accompaniment to a delicious five-cheese terrine with bluebells.

CALLABRIGA RESERVA DÃO 2004 is produced from the red varieties Tinta Roriz, Alfrocheiro Preto and Touriga Nacional.
Climate
In 2004, the Winter and Spring were drier than usual. The Summer was very hot, and some rain in August provided us with very concentrated and balanced grapes. The hand-picking of the grapes took place under dry climatic conditions; maintaining the quality of the grapes.
Winemaking
CALLABRIGA RESERVA DÃO 2004 is made using the most advanced winemaking techniques at Sogrape's Quinta dos Carvalhais winery. Carefully selected grapes displaying the best maturation are chosen from plots in our vineyards. After gentle crushing and complete de-stemming, they ferment under controlled temperature and soft maceration technology. Alcoholic fermentation lasts for about 8 days at an average temperature of 28ºC.
Ageing
Following malolactic fermentation, wines are matured in oak casks, where they age for about one year. The final blend is created to mirror in the finished wine, the true expression of the Dão region. After bottling, the wine is cellared for an additional 12 months at a controlled temperature of 15ºC. To preserve its great quality, it is bottled without cold-stabilisation, and therefore a slight deposit may develop during its ageing. CALLABRIGA RESERVA DÃO 2004 will age well in bottle for 8-10 years.
