Serving Suggestions
HERDADE DO PESO RESERVA is ideal with rich and spicy meat dishes, game and strong cheese. Ideal temperature: 16º - 18º C.
Varieties
HERDADE DO PESO RESERVA 2002 was made from the best blends of the varieties Aragonês (80%) and Alfrocheiro (20%) from Herdade do Peso, owned by Sogrape in the Vidigueira sub-region.
Winemaking
The wines which make up HERDADE DO PESO RESERVA 2002 were vinified at the Herdade do Peso wine centre using high technology, from selected grapes picked at their ideal maturation stage. After full stem-removal and soft crushing, fermentation and maceration through pumping-over in stainless steel vats at a 28ºC controlled temperature took place. This was followed by an extended post-fermentation maceration for 10 days, to increase aromatic and
polyphenolic extraction.
Ageing and Storage
The wines were transferred separately to new French and Caucasus oak-wood barrels where they remained for about a year. The final blend was prepared after numerous tasting ensuring the best selection of wines from the best barrels. Bottling was followed by ageing in bottle at a 15º C controlled temperature for about 12 months, so that the suitable balance for drinking could be reached. Bottled without treatment, this wine may develop a slight deposit. The bottle should be stored horizontally in a dry and cool place.
